One of my childhood favourites!
Think of it as an alternative to apple crumble. Or an apple crumble for apple crumble naysayers.
Soft, warm apple under a comforting blanket of flapjacks. It is absolutely divine! And such a straightforward recipe, almost combining two of my favourites: flapjacks + apple crumble!
To feed four, you will need:
4 large cooking apples (roughly one per person)
Two tablespoons golden caster sugar
Two teaspoons ground cinnamon
A little water
For the flapjack crumble:
4 oz butter
3 oz light brown sugar
2 heaped tablespoons golden syrup
7 oz porridge oats
First, prepare the apples.
Peel and chop each apple into chunky slices. Sprinkle with sugar and cook until they start to melt…
Add the cinnamon and pour into a large oven dish.
Now, make the flapjacks.
Put the butter into a medium sized saucepan.
Add the golden syrup and the sugar and stir until it’s dark and gooey.
Remove the melted butter-sugar mix from the heat and add the oats and stir.
Gently spoon the oats over the cooked apple.
And bake in the oven for about 20 mins – half an hour on 170C.
Soft, indulgent… and brilliant!
