Nothing says ‘Je t’aime’ like a melt-in-the-middle chocolate truffle. But a homemade chocolate truffle? Well, you’ve lovingly gone the extra mile! And there’s absolutely no need to disclose that these impressive chocolate truffles are incredibly simple to make…
For 30 decadent truffles, you will need:
300 ml (or ½ pint) double cream
55g slightly salted butter
280g good quality dark chocolate chopped into pieces (I love the Green and Black’s Dark Cooking Chocolate)
To decorate – your choice!
4 tbsp of icing sugar
1 tsp cocoa powder
A couple of chunks of white chocolate or milk chocolate
Pour the cream into a saucepan. On a very low heat, add the butter and stir gently until the butter has melted, and just before the cream has reached boiling point, remove from the heat. Add the chopped dark chocolate and stir until completely melted, molten and delicious. Pour into love heart shaped chocolate moulds (if using) and the rest into a bowl and allow to cool completely before putting it into the fridge for a few hours (or overnight).
Once set and firm remove from the moulds and take a teaspoon to the chocolate bowl to scoop out and excavate your truffles! Form little chocolate balls of goodness.
Decorate as you wish…
I sifted a little icing sugar and cocoa powder into a bowl and placed some of the chocolate truffles with a teaspoon into the icing sugar allowing each one to coat white.
With others I simply melted a tiny bit of white chocolate and ‘iced’ the top of love hearts. You could grate a bit of milk chocolate and dip the chocolate truffles into the shards of chocolate with a fork or cocktail stick.
