You know summer has arrived when your mind wanders, unprompted, to thoughts of iced coffee. Luckily won’t need to travel further than your kitchen for the ultimate choice in chilled, caffeinated beverages.
For three iced coffees, you will need three ingredients:
3 coffee filters
3 scoops of ice cream (Kelly’s Clotted Cream Ice Cream is my favourite!)
Brew three filtered coffees and pour into a Pyrex jug and allow to cool completely before refrigerating until you are ready.
Get some ice into a large glass bowl.
Crushed or cubed, it doesn’t matter.
Top with three generous scoops of ice cream.
Smooth, creamy and thick vanilla ice cream.
Pour in the chilled coffee and blend with the ice and ice cream!

When it’s a smooth consistency, pour into glasses.
