Fancy making a delicious beef stir fry this weekend?
This recipe is ridiculously easy and crammed full of fresh vegetables.
For four people, you will need:
2 rump steaks
1 red onion
2 cloves of garlic
4 carrots
4 leeks
A little olive oil
Good quality stock
A sprinkle of dried herbs
Pop your steaks in the oven and drizzle with a little olive oil and cook on a medium heat (that way it’ll be nice and juicy, succulent steak for the stir fry.) Meanwhile, finely chop your red onion and garlic.
Finely chop the leeks and cut your carrots into fine batons.
Put the vegetables into a large wok and cover with water and 2 tsp of stock.
Steamy!
Slice the steaks into smallish chunks once it’s almost-cooked.
Save some of that lovely gravy and add it to the wok, with a tablespoon of dried herbs (M&S are the best as they somehow taste like fresh herbs!)
Sprinkle the herbs over the vegetables and sliced beef.
Stir together and simmer on a low heat for about 10 minutes until a it’s beautifully cooked and smelling divine!
I served mine with some boiled/steamed rice, but it’s perfect with your favourite noodles or anything you fancy!
