Here’s something to work up a lot of enthusiasm for (although I’m almost embarrassed to call this a recipe, as it’s simply a ‘meeting and heating’ of basic ingredients already in your cupboard and fridge that, when cooked together, creates a very quick and ridiculously easy meal in 10 minutes): no call for weighing scales and you make it in one saucepan. Perfect for a fast lunch that doesn’t compromise on taste!
You’ll need just 3 ingredients:
Dried pasta shapes (I chose the curly Amori shape)
Good quality mature cheddar cheese, roughly the size of 2 Penguin chocolate bars (per person)
About a tablespoon of slightly salted butter
Cook your pasta to your liking and drain it, but save almost half an inch of pasta water in the pan. Put your pasta in a bowl and set to one side.
Roughly chop the cheddar into small pieces. Return the saucepan to the heat and add the butter and the cooked pasta and stir, before adding the cheese. Keep stirring until the cheese has completely melted and covers your pasta in a loving blanket of glistening cheese goodness.
Pour the pasta and every bit of sauce into a bowl and enjoy.
It’s really that easy! And cheesy.
