I think these oat biscuits are just the snack you need right now. Ridiculously easy and quick to make, you’ll be crunching on these through to the new year!
To make 12 biscuits, you will need:
125g porridge oats (ideally go for finely milled oats, like M&S Traditional British Porridge Oats or Ready Brek, rather than jumbo oats)
120g butter plus a little extra for greasing
70g demerara sugar
Preheat the oven to 180° C.
Melt the butter in a saucepan and remove from the heat before it colours.
Mix the sugar with the oats.
Add the butter to the oat mix and stir, making sure the oats are coated with butter.
Carefully form small biscuit shapes and arrange on a prepared baking tray that has been greased out with a little butter.
Bake in the oven for 15 minutes.
